On Friday 19th September, Gylly Beach will host a rare and unforgettable celebration of one of Cornwall’s greatest treasures: Cornish line-caught tuna. This is not just a dinner, but a ceremony of skill, respect, and shared feasting, with the Atlantic as a breathtaking backdrop.
Your evening begins with a welcome glass of Tresor Cornish Sparkling Wine, crafted from grapes grown at our own vineyard. Guests will then witness the ceremonial cutting of a magnificent 60kg sustainably hook-and-line caught tuna, guided by renowned local fishmonger Tom Jonik, a master of his craft who brings reverence, precision, and passion to every cut.
Working in harmony with Tom, our chefs — Head Chef Ben Ambridge and Sous Chef Sam Blackburn — will transform each cut as it’s prepared, creating a sequence of exquisite tasting plates that showcase the unique qualities of the top loin, bottom loin, belly, and more. Each dish is paired with the finest seasonal produce from Cornwall’s top suppliers, including Soul Farm.
The banquet reaches its crescendo as guests are seated at long tables to enjoy a hero dish of Cornish tuna, followed by a delicate dessert to round off the evening. This is a night of theatre, taste, and connection — a chance to sit shoulder-to-shoulder with fellow diners, learn new techniques, and celebrate one of Cornwall’s culinary gems.
